RECIPE | Tomato Cucumber Salad
I enjoy this cucumber salad year round. Cucumbers are a good food to eat for weight loss and contain magnesium, Vitamin C and Potassium to name a few.
Ingredients:
2 green cucumbers
1 medium red onion
3 Roma tomatoes
1/2 cup bread & butter pickles
1/4 cup of raisins
sesame seeds (optional)
parsley (to taste)
chives (to taste; I LOVE these)
ground black pepper (to taste)

1) Wash cucumbers, tomatoes and red onion.
2) Peel cucumbers and then cut cucumbers into 1/2" slices. Cut tomatoes into wedges.
3) Cut red onions into thin slices.
4) In a stainless steel mixing bowl, combine cucumbers, red onions, tomatoes, pickles, and raisins.
5) Sprinkle salad with sesame seeds to taste.

RECIPE: Healthy Green Salad
This recipe for Healthy Green Salad is one of my favorite recipes for Paleo. I make it every week and store it in the refrigerator. The key to keeping it fresh is to store it WITHOUT salad dressing. That way, the salad leaves do not become wilted and water-logged. In addition, this salad is loaded with vitamins, antioxidants and most of all flavor. It can pep you up in minutes and is easy on your digestive system. I'll eat this salad at any meal and use it for getting my stomach back into balance. In the past, my doctors have recommended that I not eat too many raw veggies after having a bout of stomach attacks but I've noticed that small amounts of this salad each day is one of the few things that brings my system back into balance.

This is my Quick and Easy Lemon Honey Salad Dressing. I've shared this recipe with my family many times for the holidays. I always get compliments on this at pot lucks. I love it on my salads and even as a marinade for chicken and pork. The best thing about this dressing is that even though it can be stored for days in your fridge, you only need to make as much as you need because it is so quick to make. The ingredients are all fresh, cheap and of course good for you.
