RECIPE | Grilled Tofu Salad

 This is one of my standbys for boosting protein in my lunch. The tofu is from my list of powerhouse proteins with my favorite green salad. This grilled tofu w/ caramelized onions and peppers on green salad. It makes a great lunch or dinner. Light and healthy but filling at the same time.

Ingredients:

* Recipe for Healthy Green Salad
1 large onion
1 medium red peppers
1 package of extra firm tofu
2 tablespoons of olive oil
 
 
Seasonings:

parsley (to taste)
chives (to taste; I LOVE these)
ground black pepper (to taste)
salt or chicken bullion powder
 
Instructions:

1) Preheat a medium skillet pan on medium heat.

2) Spritz the pan with olive oil or water.

3) Slice the tofu into 1/2" thick slices.

4) Place tofu slices into skilled pan.

5) Season tofu with pepper, salt, chives and parsley.

6) Brown tofu slices on both sides for a few minutes. Remove from pan.

7) Saute sliced onions and red peppers in the same pan.

8) Serve the grilled tofu with carmelized onions and red peppers on top of a  Healthy Green Salad.

You're DONE!
