RECIPE (UPDATE): Easy Salmon Croquette

UPDATED: (I've added my Honey Mustard sauce to this recipe.)

These little babies also make a great breakfast item with scrambled eggs. I make this recipe all the time especially on Fridays. I also make it at Thanksgiving, Christmas and New Year's Eve as an appetizer. My guests eat them up! The other thing I LOVE about this recipe is that it is sooooooooo EASY and QUICK.  So, here's my recipe for Easy Salmon Croquettes.

 

 

 

 

Ingredients: (This recipe makes 12 croquettes)

1 can of pink salmon (always use Wild Salmon)
1 small white onion, diced
½ clove of fresh garlic, chopped
½ cup scallions (white part), diced
¼ cup of egg substitute (or use 1 medium egg)
½ cup wheat flour  (I prefer non-gluten because of my stomach)
Olive oil spray
½ cup of water

Seasonings:
ground black pepper (to taste)
parsley (to taste)
fresh ginger, gated

Sauces:
Medium Salsa sauce (optional)
Homemade Honey Mustard Sauce (link)

Instructions
1) Preheat skilled with oil on high flame
2) In an aluminum bowl, mix salmon, onion, scallions, egg, flour, water, spices
3) Use teaspoon to form 12 patties in a warm skillet coated with olive oil spray
4) Cook patties on medium flame until brown on each side. (*about 10 minutes first side, 5-7 minutes second side)

Serving Ideas:
1) Serve with salsa on top
2) Serve with sauce in a dipping cup
3) Place the patties over a big Healthy Green Salad platter (This is my favorite.)
