RECIPE: Very Berry Fruit Salad

Fruit salad is an essential part of my eating healthy lifestyle. I love having fruit at any time of the day but mainly in the morning with eggs. Since, I don't eat carbs often, I usually start my day with scrambled eggs or an omelet followed by a fruit smoothie or fruit salad.

In this post, I share my favorite fruit salad.

Ingredients: (* makes 6 small servings)

> 4-5 Red Delicious Apples
(I keep a 5-lb bag of these in the fridge every 3 weeks. You can get whatever apples you like. I also like to use Golden Delicious ones.)
> 1 cup berries
(I use strawberries, blackberries and blueberries.)

> 2 large oranges
(My favorites are Valencia and Navel.)

> 1 mango
(I like these for their taste and crunch.)

> 1 cup of fresh pineapples or 1 can of pineapples (optional)
> 2 medium bananas
(I don't use bananas b/c of their starch content but they make a good addition.)


Instructions:



1) Wash all fruit in a colander.



2) Cut the apples into bite-size chunks and place into a mixing bowl. (*If your apples are not organic, I would suggest peeling the skin off of them.)


2) Peel and cut the oranges and mangoes. Place both into the mixing bowl.


3) Remove the green leaves from the strawberries and cut them in half. Place them into the mixing bowl.


4) Cut the pineapples into bite-size chunks and place into the mixing bowl.


5) Cut the bananas into bite-size slices and place into the mixing bowl.



6) Stir the fruit mixture in the bowl.
