RECIPE: Easy Soup Mirepoix

What is Mirepoix? I had been hearing this for years and never knew what it was. The word Mirepoix is French and is pronounced like "mirra-pwa". It is a mixture of chopped carrots, onions and celery that is mainly used to flavor soups, sauces and stocks.

You can use this simple mixture to flavor any type of meat and soup base. It is easy to make and remember in addition to being nutritious. Oftentimes, I add broth, garlic, ginger and butter in my mixture.


My Mirepoix mixture in the photo was used in my 6-quart slow cooker to make a weekly soup.
Ingredients:
(*This recipe uses a slow cooker or covered pot. )


1 can of low-sodium vegetable, beef, or chicken stock
1 can of filtered water
6-7 whole garlic cloves
1 package of baby organic carrots
4-5 stalks of celery
few pats of butter or margarine
1 large chopped onions


Seasonings:


parsley (to taste)
chives (to taste; I LOVE these)
ground black pepper (to taste)
chicken bullion (tiny bit to taste)
red pepper flakes (if you want it a bit "hot" and spicy)


Instructions:


1) Wash all vegetables using a a scrubbing brush and a colander.

2) Empty the broth and water into the slow cooker or pot.

3) Place the carrots into the slow cooker or pot.

4) Slice the onions into large quarters and place into the slow cooker or pot.

5) Slice the celery into large chunks and place into the slow cooker or pot.


6) Peel the garlic cloves and place them into the slow cooker or pot.

7) Sprinkle the mixture with the seasonings listed above.


8) Slice several pats of butter over the mixture. 

9) Set the slow cooker to 2 hours on low heat or until vegetables are tender.
