RECIPE: Roasted Baby Red Potatoes


So, you may think that red potatoes are boring right. Not these! They are a staple in my household every week. We use them for breakfast with eggs; at lunch with my Healthy Green Salad and of course at dinner. Yummy! With my stomach's digestive problems, baby red potatoes have much less starch in them than white potatoes and don't hurt me as much. In this post, I present my easy to make Roasted Baby Red Potatoes.

(* The dinner plate is from one of Cindy Crawford's tropical dinner set collection. While I don't eat from "regular-sized" dinner plates, I use them as servers at the holidays. Guests go "ga ga" over them.)

 





Ingredients:
Baby red potatoes  (I keep a 5-lb bag of these in the fridge every 3 weeks. Get the baby ones because they don't have as much starch as the other ones. A doctor told my mom that once.)
Olive oil (extra-virgin)


Seasonings:
parsley (to taste)
chives (to taste; I LOVE these)
ground black pepper (to taste)
chicken bullion (tiny bit to taste)
red pepper flakes (if you want it a bit "hot" and spicy)
paprika (tiny bit for more color)


Instructions:
1) Preheat oven to 400 degrees.

2) Wash baby red potatoes by scrubbing them with a brush. (*This recipe pictured uses 4 small potatoes.)

3) Then, cut the potatoes into bit-sized pieces. I first cut each potato lengthwise and then in half
lengthwise. Finally, I cut those wedge into thirds.

4) In a mixing bowl, pour in the potatoes, olive oil and spices. Make sure that potatoes are coated thoroughly. (I mix them with my hands.)

5) In an aluminum foil pan, spread out some aluminum foil. Coat it generously with olive oil.

6) Spread the potatoes onto the pan.

7) Place into the oven uncovered for 20 minutes; Shake them up vigorously (if they stick, use a spatula to move them around); Then cook uncovered for another 20 minutes. Stick the potatoes with a pitchfork. The pitchfork should move evenly through the potatoes without much effort. If not, cook for another 5-10 minutes.

*Serve them on a pretty platter and you are DONE!  Consider serving with scrambled eggs or with a  Healthy Green Salad.
