RECIPE: Quick Honey Lemon Salad Dressing



This is my Quick and Easy Lemon Honey Salad Dressing. I've shared this recipe with my family many times for the holidays. I always get compliments on this at pot lucks. I love it on my salads and even as a marinade for chicken and pork. The best thing about this dressing is that even though it can be stored for days in your fridge, you only need to make as much as you need because it is so quick to make. The ingredients are all fresh, cheap and of course good for you.







 
Ingredients:
(makes enough for 1 medium bowl of salad; for 4 bowls of salad: use a larger emptied pickle jar and quadruple recipe)

1 small jar (I use a cleaned out small empty jar of pickled artichokes hearts; it's small enough to shake vigorously in your hand)
1/2 lemon (squeeze the juice; grate in some of the lemon's skin [called zest])
2 tablespoons of extra virgin olive oil
1 cap of apple cider vinegar
1/2 teaspoon of honey (You a little more if you want this a bit sweeter.)

For spices:
dash of ground black pepper
generous dash of parsley(I use Tone's seasoning)
generous dash of chives (I use Tone's seasoning)
dash of red chili pepper flakes (if you like your dressing spicy)

Instructions:
1) Place all ingredients (lemon, olive oil, vinegar, honey, spices) in the small jar. Be sure to close the lid as tight as possible.
2) Shake jar vigorously side to side.
3) Drizzle onto your salad. (I make a great Healthy Green Salad.)

*Note: This dressing can be stored like store bought dressing but again, I prefer to make it up fresh when I need it.
