This article is a healthy recipe for easy to make Baked Macaroni and Cheese with Greens. While I have problems eating pasta, there are plenty of alternatives to make a savory "macaroni and cheese". Since, I have digestive problems, I actually use steamed, chopped cauliflower in place of the macaroni.
Ingredients
1 box of elbow macaroni
( healthier choices: gluten-free macaroni, wheat-based pasta, Quinoa-based for non-wheat; cauliflower)
2 cups of fresh greens
(choose: in season and organics like spinach, swiss chard, turnip or mustard greens)
1 cup shredded Mozarella cheese
(I like the low-fat Kraft)
1 cup shredded Sharp Cheddar cheese
(I like the low-fat Kraft)
1 teaspoon wheat flour
½ cup of skim milk
ground pepper
parsley
1 tablespoon soy sauce
Instructions
1) Boil macaroni (or other alternative), slightly undercooked, drain
2) Steam greens in water until tender but not wilted, add 1 tablespoon soy sauce
3) Add macaroni, greens and cheese in layers
4) Combine 1 teaspoon wheat flour and ½ cup of skim milk
5) Add mixture to macaroni mixture, cover and place in a preheated 375 degrees oven for 1 ½ hours.
